Gluten Free Pasta Salad With Grilled Veggies
Ingredients for 6 people
Preparation time: 20 mins.
Cook: 10 mins.
1 box Barilla Gluten free Penne
3 tbsp red wine vinegar
1 red onion, cut into 1 inch pieces
1 pint grape tomatoes, burst on a grill
1 tbsp fresh oregano leaves
4 tbsp extra virgin olive oil
2 zucchini or courgettes, cut into 1 inch pieces
1 eggplant, cut into 1 inch pieces
1 cup crumbled feta cheese
Grill zucchini or courgettes, red onion & eggplant, then chop. Set aside.
Bring a large pot of water to boil.
Cook pasta according to package directions.
Meanwhile, toss all vegetables with oil, vinegar, salt pepper and oregano
Drain pasta, mix with grilled vegetables then top with feta cheese
Serve immediately, do not chill.
