The cream cheese and chives make for a classic pairing with smoked salmon, proving that sometimes you simply can't beat timeless combinations. Add a squeeze of lemon for a refreshing finish.

Start by preparing your pancake batter. Heat a non-stick pan over medium heat and pour a ladleful of your pancake batter onto the pan.
Cook the pancake for 1-2 minutes on each side until golden brown and cooked through.
Spread a generous layer of cream cheese onto each pancake.
Place the salmon on top of the cream cheese-covered pancakes.
