This Is The Perfect Way To Cook A Courgette

Now that we are in peak courgette season, many of us will be wondering exactly what and how to prepare this versatile summer squash.

Google searches reveal that queries for ‘what to do with courgettes’ are up by 250% in the past 90 days across the UK.

HelloFresh’s Senior Recipe Developer, Mimi Morley has shared her top tips for cooking the vegetable, along with some tasty courgette recipes.

Mimi reveals that the key to unlocking the perfect consistency and flavours of courgette is in your cooking method.

Courgettes have a high water content, making them tricky to cook as they can often become soggy during cooking. Mimi suggests cooking them quickly on a high heat to get around this problem.

“After slicing the courgette cook them quickly in plenty of olive oil on high heat and remove with a slotted spoon (you don't want them sitting in the oil), then stir into whatever you want to use them in.

The Meghan Markle Method

Of course, you can also lean into the courgette's natural water content and consistency and copy Meghan Markle’s courgette pasta. This method involves slow cooking the courgette with simple ingredients like garlic, vegetable stock and onion on a low heat for at least two hours. Once it’s ready sprinkle in parmesan and fresh herbs and mix through fresh pasta.

“If you prefer to retain some of the courgette's firmness then simmer your courgettes for slightly less time” adds Mimi. “This means you’ll be left with delicious courgette chunks which you could also pair with Mediterranean vegetables like peppers and aubergine.”
