Top 10 Summer Cocktails: No. 10 Pina Colada

With the weather warming up and people escaping once more into their gardens for BBQ’s, bars opening up, and generally some sense of ‘normal’ returning, Joseph Miller, top Mixologist at Blackfriars in Newcastle, and voted second best in the world by Brockmans Gin, will reveal his Top 10 cocktails for this summer over the next 10 weeks, exclusively for the Great Northern Food and Drink Festival.

“These are the top most popular cocktails which we will be serving for the summer, as well as an extensive menu, but these epitomise summer in a glass,” explains Joseph.

This week No 10. PINA COLADA

Visually this iconic cocktail epitomises summer, especially when on holiday. The recipe I like to use is:
50ml spiced rum (coconut rums such as Kola Kanu or Malibu are a very good alternative)

50ml double cream
25ml coconut cream
50ml pineapple juice
20ml lime juice

This can either be shaken in a Boston tin with ice or blended to your satisfaction. It’s always nice to garnish generously with these cocktails. Pineapple wedges, maraschino cherries, and an umbrella are all satisfactory for the occasion.
