His thoughtful conversion of a traditional barn preserved the original structure and materials, creating a spacious, light-filled dining venue that harmoniously connects with its rural surroundings. While occasionally erring on the cooler side temperature-wise, the bright, airy space provides a versatile setting for various gatherings – from corporate events to friendly reunions. Though its atmosphere hovers between modern gastropub and refined refectory, perhaps lacking slightly in intimacy, it transforms beautifully into a sun-drenched breakfast room to start each day of your countryside escape.

The menu offers ample choice, and our starters showcased both the kitchen's finesse and its occasional overreaching. A beautifully seared scallop arrived accompanied by tempura king prawns of remarkable delicacy – their batter so light it seemed to evaporate on the tongue. Hudson's imaginative approach to cauliflower – presented as pickled florets rather than the ubiquitous puree – demonstrated genuine culinary thoughtfulness. However, the bacon jam, though conceptually sound as a pairing with scallops, delivered such overwhelming sweetness that it diminished an otherwise five-star dish to four, despite the fresh counterpoint provided by the vibrant pea and watercress puree.

Our second starter, dill-cured sea trout with asparagus, lemon gel, cured egg yolk and seeded cracker, presented as a textural playground. The succulent trout held its own against the satisfying crunch of perfectly prepared asparagus and the rich unctuousness of the cured egg yolk. Yet the seeded cracker seemed a superfluous addition, while the promised dill and lemon notes whispered rather than sang, leaving one wondering what heights this dish might reach had these flavours been allowed to truly assert themselves.

For mains, the kitchen displayed both prowess and occasional inconsistency. The lamb cutlet arrived perfectly pink and succulent, accompanied by a breast stuffed with mushroom, pine nut and herb – a textural masterclass. The watercress and pea puree provided a verdant foundation, while pickled peas delivered tangy contrast without overwhelming the plate. A subtle tarragon emulsion completed this thoughtful composition, demonstrating Hudson's keen understanding of balance and restraint.

The accompanying boulangère potatoes with lemon and herb crumb, though flavourful, erred on the dry side – a minor misstep in an otherwise accomplished offering. Despite being tempted by monkfish with langoustines and vadouvan curry risotto, we opted for that reliable benchmark of kitchen quality: a 10oz sirloin with hand-cut chips, confit tomato and grilled mushroom.

Though cooked precisely to medium and properly presented with its fat intact, the steak curiously required additional seasoning to fully express itself – surprising given the reputation of supplier R&J, whose meats typically sing with intrinsic flavour. Fortunately, the accompanying mushroom positively burst with earthy richness, while the chips achieved that elusive perfect balance between crisp exterior and fluffy heart. A selection of sauces offered welcome personalisation to the plate.

The dessert course elevated the entire experience to new heights. A rhubarb and custard panna cotta arrived with poached rhubarb, pistachio crumble, rhubarb granita and pistachio ice cream – each element executed with precision and purpose. The cherry mille-feuille proved equally impressive, its delicately light pastry supporting vanilla and ginger mascarpone without collapsing under pressure. Sour cherries provided welcome acidity while a textural crunch element encircling the dessert showcased technical finesse. The dish added depth without heaviness – particularly welcome after a substantial meal. Both dishes were especially noteworthy for elegant execution and harmonious integration of components.

As evening descended, a leisurely stroll through the grounds revealed yet more of Sandburn's charms – a beautiful rose garden perfectly suited for weddings caught the last light of day, while the impressive sports hall underscored why this versatile venue excels for corporate retreats. The short walk back to our room allowed the evening's indulgences to settle before retiring to supremely comfortable beds that delivered the promised respite from everyday concerns.

Morning brought one final culinary offering before departure: a breakfast executed with the same care evident throughout our stay. Perfectly cooked traditional fare provided ample sustenance for the journey home, leaving us to reflect on the comprehensive experience Sandburn Hall delivers.
